For longer (up to 8 hour trips), I'd add Muffins
(whatever you prefer for a flavor), Tamari Almonds, and a pesto
tortellini salad. The salad being your favorite tortellini, slice
green olives, marinated artichoke hearts, and a pesto/golden
balsamic vinegar dressing (1 part vinegar to 2 parts pesto).

reference, the menu states: Grilled chicken breast with freshly
prepared bruschetta salsa, pesto aioli, Provolone cheese, shredded
Romaine lettuce and balsamic cream on rustic Ciabatta
bread. It's the pesto aioli and the balsamic cream that make
it so special.
