these charts do not take into consideration what happens to these

These days I won't make meatloaf or meatballs without at least a
little turkey because I find the flavor brighter and more complex.

restaurants can cook your veggie stir fry or veggie fried rice in
the same wok that a chicken something or other has just been cooked
in. Or french fries could be fried in the same oil as meat
has.
