What I’m doing with my life
I cook. They pay me to do it at a "serious" restaurant, but I do it for free or at cost in a variety of other environs. It's a calling that luckily pays my bills.
Moved out here from NYC to go to Macalester College, but wasn't very happy. Not really sure if I'll continue with higher education at this point. It's tempting, but there is a whole lot of extra-academic knowledge to acquire. For now, I'm makin' money, makin' food, hopefully fabricating some happiness for others. I sing, I build, I blog (ugh).
I’m really good at
Teaching. I enjoy it a lot, so don't be shy about taking me down a peg if I get too pedantic.
Cooking. It is a great joy, but perhaps at its finest when done for loved ones & friends. Though improvising for trusting house party hosts is pretty fucking great too.
The first things people usually notice about me
I am pretty hairy. Like, for real. I have had a moustache since high school. I originally wanted one so that I wouldn't get carded, but since then, it's grown on me [rimshot]. I like to wear clothes. People tell me I'm good at it.

Notes from the Underground, Sailor who fell from Grace with the Sea, most of the Virgina Woolf that I've encountered, and Montaigne's "Essays." "Perfume" is next on my reading list.
I watch a lot of Werner Herzog movies with my dumb buddies. We crack a lotta jokes. He is an astounding individual who produces compelling films, yet his theses are predictable and universally characterized by a dystopic naturalism that is as idealistic and reductive as the Thoreau shit that he seeks to criticize.
Music is all over the map. Old house, post-punk, Afrobeat, indie and classic hip hop, some opera (used to sing it), jazz that doesn't suck, Disco disco disco & a lot of boops and bleeps. Beats in Space is a Favorite Podcast. Dfa and Factory are some favorite labels. Larry Levan was an idol for a long time. I am pretty picky about what I like, but not about what you're playing. Disclosure, Bicep, Blood Orange, have been playing this evening. Grace Jones is next.

I will eat anything, as long as someone else tells me its good, or seems to enjoy it. I want to eat everything. I have some aesthetic notions about what makes food good, but I enjoy every opportunity to challenge them. Influences that I grew up with: North Italian, Thai, Indian chaats, 'La Grande Cuisine Française', Jamaican, and "New American". Current inspirations: Extant Pre-columbian north american food-ways. Amish stuff. Bodegas. Eggplants. Homemade machines. Phytomorphology. Ritual transformation of the mundane. Beans and Rice. Borago, Santiago. Geranium, Copenhagen. Mugaritz, Errenteria. Steirereck, Vienna. Tim's Kitchen.

The six things I could never do without
A Knife - A professional necessity, an object of sustained care. A tool for survival, a tool for expression, a tool of beauty and danger and grace.

Company - I like to chat, joke, assist; I get my rocks off being courteous. I am generally a bit shy in public, so as not to impose, but I will always compliment strangers when they do things with panache.

Cast Iron skillet - whatever goofy desert island fantasy is going on here, I want to cook some vegetables, damnit. I'll need a pan.

Cloth - Bandana, old t-shirt, Kitchen towel, handkerchief, cloth napkin, w/e. I make messes, but I clean the fuck up.

A large reference work - The Internet, How Things Work, On Food & Cooking, an old Encyclopedia Britannica, a fucking medieval Hagiography if I'm desperate. Doesn't have to be a book, though they sure have their charms. As long as I'm learning something.

A Notebook/pen - things gotta be remembered, other things need to be explored, and some are special and need to be drawn. Also, some things need to not be uttered aloud.

Oh god. Uh, economics (though perhaps not informedly), public health policy, patterns of dissemination in "low" culture, funny shit, plants and fungi, books, "style,"aesthetics, films, and umm... FOOD occasionally theology & math and epistemology etc.
On a typical Friday night I am
Cooking/Working. -> Bars/Friends Houses. -> Someplace where I might be able to dance.
I like to go to new places, see all the different environs people create for themselves. Usually home around 1:30, but 3:00 isn't uncommon, and if it's really worth it, 5:30 is definitely an option.
The most private thing I’m willing to admit
Tried being gay when I was 14. Didn't really pan out, so I bulked up a bit and made myself "manly." Feelin pretty comfy with it so far, though the white-hetero-cis-male privilege thing seems to require some sensitivity.
