Roberto Jesus Moncada was born in Brownsville, Tejas. A city right
on the U.S. and Mexico border, he was raised with the strict and
traditional ways of
Mexican-national parents that loved him
and fed him very much. He was raised believing in strong values and
respect toward the
human population, and he still does as hard as it may be. He
graduated early from high school in 2005 where he spent most of his
time drawing and creating epic collages and wall installations and
immediately relocated to Austin, Tx. After attending community
college where he majored in
visual art, he dropped out and
started working full-time to support himself. After living in
Austin for about 18 months, he moved to San Antonio in search of
something new. He greatly missed Austin, but soon found a
comfortable niche working in kitchens and bakeries. He always liked
food and cooking growing up and dreamed of working in a haute
cuisine
environment, and for the first time in his life he saw food as not
merely nourishment but as a piece of artwork.
That's the main idea, I suppose. I find it sort of difficult to
summarize myself with words. It'd be easier if it were a
dance or something. You'll
learn moar.
I am currently working at the Watermark Grill here in San Antonio.
It's set to open the 30th of October, but there's A LOT to be done
until then. I'm planning to attend the Culinary Institute of
America next year and learn even more about food, anything and
everything. It's not what I had planned two or three years ago, but
I love it.
Aside from my career goals, I'm trying to live life as a
world-class
ping
pong champion would and strive to collect information and
resources to prepare for the zombie invasion :3
Making people feel pleased and relaxed or incredibly confused and
uncomfortable. Also, making chilaquiles and other
comfort foods.
Albert Camus and Carlos Castañeda are my two favorite authors. I
like everything I've read from them. I always carry a copy of
Descartes' Discourse on the Method in my backpack. I have acquired
a fairly large collection of old Time Life nature and info books. I
read them/use the pictures for artwork. I also like to read stuff
from Freud, but just for the lulz.
I don't go out to the theater much...just thought you should know.
Sure, I can make an exception, but theater crowds are not for me.
Well, on to the main attraction....The Holy Mountain,

American Summer, Ferris Bueller's Day Off, Leon, Tron,
El Topo, Play
Dirty, 28 Days Later, Taxi Driver, Ladies and Gentleman- The
Faboulous Stains,
Gozu....I suppose a list is somewhat
inessential for now. As long as there is an explosion every three
minutes to grab my attention, I'll be fine.
Some of my favorite artists and groups are Joy Division, No Age,
Lightning Bolt, Os Mutantes, Ariel Pink,
Gang of Four, Liquid Liquid and
lots moar from jazz to synth pop, hip-hop to jungle, DFA remixes to
cambodian music, subtle organic melodies to...the Germs.
Food. I like it all. It's my passion...that simple. Do you like
Lebanese, Belgian, Indian, Vietnamese, Cuban, Mexican and
hamburgers? I've narrowed it down to the good one's here in town.
