My self-summary
I have been a chef for the past 12 years, mostly working in NYC, but I also spent time working in DC, Vancouver and Toronto. I just finished a year long sabbatical working on a farm in the Allegheny mountains of Pennsylvania, which was an incredible experience. I I have always wanted to do this and one day i said fuck it, and just made it happen. Its been an amazing experience and i have learnt more than I could ever have imagined....plus, i get to help pigs give birth!
I believe in self-sufficiency, i think we should all know how to grow vegetables, and learn to play music. With those, we'll be happy. I have a dream of starting a homestead somewhere, but thats a ways down the road.....
I just relocated to Asheville, as in monday (12/10/12) and I am excited about being here, meeting lots of new people, starting new adventures and building community here!
What I’m doing with my life
Well, as I said before, I just finished a year long farm internship on a diversity farm in the Pennsylvania mountains, about two hours outside DC. We raised Heritage breed pigs, grew loads of veggies, have chickens, turkeys and bees. It was truly and epic experience and one that I will cherish and build upon for the rest of my life! I am now returning to my culinary roots and working in a restaurant in town, which I'm very excited about, cause the place does only farm to table food and source everything from within 100 miles of town! Its going to be interesting getting back into a professional kitchen after spending a year outside, in the boonies, but I'm ready!

Favorite books, movies, shows, music, and food
Book: Anything by Kurt Vonnegut, cookbooks, Kerouac, historical fiction and anything about pirates, pirates rule! Did you know that in certain pirate groups they lived in male pairs? And they really did love to dress up super fancy with lots of scarves and jewelry and shit in their hair...oh and drink and fight.....

Movies: Wes Anderson....need I say more?

TV: I don't have or really watch TV, but when I do, I watch Arrested Development

Food: I love all food; oysters and champagne, rustic country bread smothered in liver pate, Ramen, Pho, Chinese hand pulled noodles, a grilled steak with mashed potatoes and a salad, sushi.....oh, and I am a HUGE fan of anything fermented, Sandor Katz is a hero for sure. I spend a lot of time fermenting veggies from the farm, currently I have a fridge full or kimchi, sauerkraut, dill pickles, fermented spiced carrots, sriracha, with some turnip kimchi in the works. Where would we be without fermented foods? no beer, no chocolate, but I digress...

Music: Old-Time music, also known Appalachain string band music. Its fiddle tunes from the mountain of West Virginia, Virginia, and the Carolinas, as well as Missouri, Alabama and Tennessee/Kentucky. Its amazing music that is rooted in tradition and is a whole lot of fun to play, fellow musicians get together in a session and play tunes for hours and hours on end. Besides this uber geeky music, I listen to classical, jazz, indie rock, swing, folk, and I am getting way into honky-tonk. Its fun to play, sing and dance too...there are few things that are more enjoyable than two stepping till the wee hours....
Also, punk, jazz, classical, indie rock, folky stuff, swing, good country, old hip-hop.... basically anything that sounds good, is played with love and makes me feel good!
