I'm only really doing this to increase my profile completedness, because I'm anal like that and want to get rid of the progress bar.
But as I'm here, have a vegan sausage recipe. They're very tasty.
2 cups cooked haricot beans (if canned, drain most of
liquid)
1/2 cup or more (depending how wet the mix is) potato flour (I
subbed 1/4 cup millet flakes, 1/4 cup soya flour and 1/4 cup maize
flour)
2 med mushrooms, finely chopped
1 small head garlic, finely chopped
1 tsp ground fennel
3 tsp basil
3 tsp parsley
1/2 tsp pepper
3 tsp rosemary
3 tsp sage
3 tsp veg stock powder
Up to 1/4 cup crushed nutritional yeast flakes (optional, but
yum!)
Olive oil
Mash beans.
Mix in mushrooms.
Saute garlic.
Mix in garlic with its frying oil, and half of the stock
powder.
Mix in flour gradually, until you can form sausage shapes with the
soft dough.
Make sausage shapes.
Mix dried herbs, rest of stock powder, and yeast flakes
together.
Roll sausages in seasoning to coat.
Fry sausages in batches on med-high heat, turning to brown each
side.
Cut sausages in half lengthways (being careful not to crush them)
and fry new raw side.
