Extreme Soup (for anyone curious about it)

2 Large White onions (I have found one is plenty)
1-1/2 lbs boneless, skinless chicken or turkey breast diced (can be omitted for veggie or use pinto beans instead)
1 large carrot, finely shredded
2 large garlic cloves minced
1 jalapeno pepper with seeds minced (I have added Serrano peppers as well)
2 Tsp minced fresh thyme or oregano or 1 tsp dried thyme or oregano
8 cups fat-free natural chicken broth
1 (15-oz) can black beans, drained (I have used several different types of black beans)
6 packed cups fresh baby spinach leaves (I have used up to 12 cups when I didn't have that much chicken)
1 large tomato finely diced (I've made with or without)
salt and pepper to taste
7 tbs grated parmesan cheese or to taste (never have)
lemon wedges (optional)
Another ingredients I have used: Dried apples, celery
Heat oil in a large stockpot over medium heat. Add onions, stirring occasionally, for 10 minutes.
Add chicken, stirring occasionally, for 5 minutes more, or until chicken is cooked through and onions are lightly browned.
Add carrot, garlic, jalapeno and thyme: cook another 2 minutes. Stir in broth and increase heat to high. (I will usually add some lime juice and Tabasco sauce during this phase)
Bring to a boil. Add beans, spinach and tomato bring back to boil, then turn off the heat ..
Add salt and pepper to taste. Sprinkle each serving with 1 Tbls Parmesan cheese, if desired, enjoy with a squirt of lemon.
I acquired this recipe from a co-worker who got it from his mother. I don't think I have made it the same way twice. Try experimenting with it!
