Unfamiliar to many Westerners, umami is a "deliciousness" factor which tastes hearty and savory. It is based upon the amino acids and glutamates which naturally occur in foods. Many Asian restaurants add a subtle taste of umami to their foods with the addition of MSG to their recipes.
